Koji Salmon With Ginger Roasted Mushrooms and Sweet Potato Mash

The flavors in this recipe blend so well, they throw the notion of 'side dish' right out the window! This one is not for people who like to keep their food separate 😉

Koji Salmon Recipe:

4 tablespoons shio koji sauce

4 tablespoons maple syrup

2 salmon fillets

Salt, pepper, & red pepper flakes to taste

Combine the shio koji, maple syrup, and spices in a container with the salmon. Cover and marinade in the fridge for at least 30 minutes, but preferably overnight.

Preheat the broiler to High. Place the marinated salmon on a baking sheet and broil for around 7 minutes, until the top is caramelized. Remove the baking sheet and tent the salmon with aluminum foil for 3-5 minutes while it finishes cooking. This extra step relaxes the proteins, giving you a super moist, perfectly cooked filet!

Ginger Roasted Mushrooms:

½ lb oyster mushrooms, torn into bite sized pieces

3 tablespoons cooking oil

½ tablespoon ginger powder or freshly grated ginger

Salt, pepper, & red pepper flakes to taste

Preheat the oven to 400° Fahrenheit. Toss the mushrooms with oil, ginger, salt, pepper, and red pepp

er flakes to coat, then spread evenly on a baking sheet. Roast for 20-25 minutes, mixing the mushrooms halfway through the baking process. Set aside.

Sweet Potato Mash

3 sweet potatoes, peeled and chopped

¼ cup milk (can be half and half or dairy free)

2 tablespoons butter

1 tablespoon maple syrup

Salt, pepper, red pepper flakes to taste

Bring a large pot of water to a rolling boil. Add the potatoes and boil until a fork can easily pierce the potato, about 20-25 minutes. If you cut large pieces, it may take longer. Once the potatoes are tender, drain the water and mash them with the rest of the ingredients. I prefer a silky-smooth mash, so I used an immersion blender. Season to taste.

To plate, I smear the sweet potato mash on a plate and top it with the salmon and roasted mushrooms. The flavors and textures just blend so beautifully - Enjoy!!
